First of all have fun. You need to remove the inner fender from the front passenger side to get at the valves. Buy a set a valve cover gaskets before you start.
You have a basic understanding what needs to be done by what you stated above. The manual states that the valves are to be adjusted when the engine is running. I have adjusted mine at full operating temp but with the engine not running which requires you to understand the relationship of valve movement for all cylinders and what is open and closed at each piston position.
According to the manual:
1) Run the engine and get it to operating temp. Shut down engine.
2) Remove the side valve covers.
3) Start engine.
4) Use two wrenches and a feeler gauge to adjust each valve. My manual say for hot adjustment the clearances are .010 for the intake valves and .014 for the exhaust valves. It also states in the text that you should add .002 to the exhaust valve clearance if the engine will be run continuously at high speeds. Which is not the normal case with these trucks.
You can also check the valve clearance cold. The clearances will be .002 greater than hot. But you need to know where each pistion is in its stroke and which valve is closed when (Both valves should be closed at TDC for each piston at the point of firing (distributor pointing to that cylinder).
