Lots of pictures. Get a notebook & make notes...bolt head design, bolt size & thread, etc.
The approach you mentioned doesn't really work, nor does the plastic bag routine because if you're planning a faithful restoration, you'll want to cad plate & re-use as many original bolts as are salvageable. Eventually they all need to be put in a box & sent for either plating, cleaning, media blasting or whatever method you plan to use.
Pictures & notes. Get a friend to take notes & pictures while you disassemble. Take tons of pictures before you even turn bolt one.
Did I mention to take lots of pictures?
