OT, back woods cookery- salted venison?

The friend who pointed me to my first PW, a 41 Command Car, in '75. Later we went up and down Baja in it. [/PW Content] He gave me a jar of salted venison that he just last week harvested on the ol' family homestead in Mississippi. It's raw but heavily salted, there is salt crystals in the jar. Smells like fresh meat.

I'm soaking enough for tonight's tacos in milk to remove some of the salt. Any better idears? Either for prep or serving?
