You have to turn up the regulator to make it charge. Set it to around 9-1/2 volts. If you don't do that, you'll have no charging at all.
The consensus seems to be that brighter lights are a good thing and they don't burn out all that much faster, and that the gauges don't mind the higher voltage. The 6 volt generator will happily put out 8 (or 9-1/2), and of course the starter is the main point of the conversion.
