If I remember correctly from my college days the point of the grease in most wheel bearing type applications is to form a boundary to hold oil around the bearings. Essentially the head causes the oil to come out of the grease and lubricate the bearings, but the grease also serves to hold that oil around the bearings as well.
Packing the wheel bearing cavity full is a bad idea since there would be no way for the grease to expand except out of the housing.
I don't think our axle nuckles see the same heat cycling as a wheel hub where the brake heat is also a factor.
