Of course gas will evaporate if you leave the cap off the tank. We don't care much about that. But the phase separation after only a few months is unacceptable for most of us, especially in engines we don't run all year round like lawn mowers, chain saws, etc. The report may read different if it was written by an engine company... There is a reason Aviation gas does not contain alcohol...

"Phase separation occurred for E10 and E15 blends, however before phase separation
was observed roughly 20 wt% of the gasoline had evaporated and the vapor pressure had dropped to less than approximately 5 psi.

Ethanol-free gasoline (E0) did not phase separate, but was found to weather to the same degree during this timeframe."
