In real life, I am a Builder. I can answer all of your questions and more, by e-mail. First, where do you live? That is a prime consideration as to design, style and type of construction.
Are you in an area that requires permits, seismic considerations, climate, etc? All that needs to be known first. These are not hinderances, just part of the info that needs to be known prior to giving advice.
Generically; a metal building is cheaper per square foot. A metal building however presents zoning problems in some areas and needs a little structural engineering to allow a second story or loft. Conventional wood framing is about $7 a foot more but has a few advantanges depending upon the above questions. For a good useable shop you should have at least a 14' eave height so that 12' rollup doors can be used. If you are considering a loft or second story storage, you need at least a 19' eave height, unless you do not want to stand up in the loft. That type of height may be little overbearing for the size "footprint" that you have. Depending upon your jobsite conditions. The 720 square feet that you have to work with presents some challanges as far as space, but it is do-able.
