The timing gear can be removed from the crank. I would think that the machine shop would have a press that could do that. Otherwise, you can do it like I did. Some folks might regard this as dangerous, so use your own judgement. I used a heavy duty Snap-On 2-jaw puller, and ran it up tight with an impact wrench. I had to run it up tight and loosen it several times in different locations before the gear finally came off. Of course, I wore safety glasses, in case any little pieces flew off. The gear was on there pretty tight.
The intake valves usually don't have any seats, although I have seen some advertised by VPW. The exhaust valves definitely do have seats, and these are hardened.
As for honing vs. boring then honing, I would ask the machine shop for their advice.
