Talk to a driveline shop. They should be able to build you a new jack shaft using CV joints if I am correct. They are capable of handling much greater angles. They are used in jeeps all the time. Their rear drive line is not much longer than a jack shaft.
I would not move the transfer case back. You most likely will have to alter the floor to handle the emergency brake. 2/12" movement would put very close to the rear edge of the floor pan. Note that the ff floor is already has a cut out for the e brake in its current location.
