Normally I'll use a die grinder and a carbide burr. Just go through one side on a flat and it releases and you can turn it with Vise Grips if you have rounded it off. If your careful and watch closely, you can stop once a high part of a thread breaks though to save a stud. Once the nut is off, rechase the threads and you are good to go.
