Moving air gives off less water to a condensing surface than stationary air, and the moving stream may in fact pick moisture up that's in the cab.
If you elect to go the sealed chamber route toss a cloth sack or tray of activated alumina beads in the cab and rotate them thru an oven to drive the moisture out.
Also vent the cab for half an hour after you've been in it. Humans throw off a lot of moisture exhaling.
