Were the rivets hard when new?? Just curious as my experience has been that stainless starts out hard and is always difficult to drill, grind etc. That would indeed make it more brittle and more reason to be extra cautious if using it for winch cable. Always weight down a winch cable with a blanket or jacket, that will help prevent a snapped cable from "whipping" around and decapitating something that you might need later, like your head.
