There would be no problem using two different u-joints on the same shaft. The only problem could be that by interchanging the parts of the two shafts, you may wind up with a shaft that is out of balance. The only reason that you never see two differnt u-joints on the same shaft is that in design it does not make sense to have two differently rated ujoints when they will always have the same load in them.
