Tim: We use Coopercoat on most all gaskets for old engines, including the head gaskets. I also used a copper head gasket, it seams to work fine and is available.
Regarding head bolts... Any bolt that penetrates the water jacket (some of the head bolts, thermostat housing, water pump and manifold) always get Permatex High Temperature thread sealant. I've used the "non-high temp" sealant and I developed water leaks on the manifold where the manifold bolts penetrated the block near two exhaust cylinders. (hot hot hot!!)
