Those are the right ones to have, and they're scarce as hen's teeth as far as I can tell. Nobody is making them any more. The nuts go into the tapered side of the washers pointy-end first, which causes the "fingers" on the nuts to squeeze together and hold onto the stud. Tall fine-thread brass nuts are a second-best alternative, but I've seen many with just regular nuts and they seem to be okay, or maybe they're just rusted in place.
The idea with an exhaust manifold is that it shouldn't be dogged down too tight, or it will crack from expansion and contraction. it's supposed to be able to slide against the head slightly. But that means the nuts have to stay in place without the usual amount of torque and/or lockwashers. These special nuts and washers are a good solution. I just wish somebody was still making them. Since you have them, definitely use them, especially in the outermost positions.
