Minimum Tire Clearance???

I'm putting a flatbed on my 55 FFPW. What is the recommend minimum clearance between the tire and the bottom of the bed? From the ones I have pics of it varies widely.

As you can see in the pics, some are pretty close, maybe 2-3 inches?

Currently, I am running 11.00r16 tires and don't want the bed height to be really high.
