Stainless has a good amount of shear strength. I'd rather see you use a grade 2 bolt. You can take any bolt and anneal it to make the steel softer. Just heat it orange hot with a torch then cover it with oil dri so it slow cools. This revised property is soft enough that you won't damage anything.
