I have fantasized about the idea of a horizontally traveling guide (like a bait casting fishing reel has) that would keep the winch cable wound neatly and not allow it to cross over. Failing in that, due to the complications involved (lack of money and engineering abilities), I have found the best way to deal with it is to: #1 Use fiber core cable and not steel core, because it is more flexible and doesn't kink or flatten as bad.
And #2 Get your winching done and then pull the cable out and wind it back in, nice and neat, the way you want it.
