1: The number 10 red wire is just conveniently connected directly to the same terminal on the starter switch as the battery cable, so the switch has no affect on current flow. The number 10 red wire is always hot.
2. The plus and minus of the ammeter are just to make sure the ammeter is hooked up correctly and that the needle deflects in the correct direction to indicate charge or discharge. The plus and minus don't indicate the positive or negative side of the electrical system. If you took the ammeter out of the circuit, it would have no impact on system polarity.
Current flows to or from the battery depending on whether it is charging or discharging.
