It must be easy because most of the M37s I've come across have been converted. The usual method seems to be put in a civvy starter and alternator, change the light bulbs, and (usually) let the gauges work as well or badly as they will. Starter is just a simple swap, if you get one with a floor pedal. Not hard to change to a solenoid or bendix type either -- you just have to add a pushbutton on the dash. Alternators seem to be of all sorts, with all kinds of jerry-rigged brackets. M37s use a "B" size belt so you might have pulley issues.
One good reason to change to 12 is simply the cost and unavailability of 24V headlight bulbs. Another is difficulty of jump-starting from any normal vehicle. I can see why most were converted.
I happen to like the 24 volt stuff, so if you pull it out, I'd like to buy it from you, or even just the cables that screw into the regulator.
