Given that one of the popular air compressor options for these old rigs is to use some certain early A/C compressor (I forget which one), it would clearly be possible to use the A/C compressor as an actual A/C compressor as well. Of course then you get into designing a refrigeration system from scratch to use modern freon, which might not be trivial.
Personally, I'm with Jerry. Crank open the windshield and at 45 mph top speed, that's all the A/C anyone needs.
Or if you want to be period-appropriate, there was apparently an after-market swamp cooler that was popular in the 1950s that you stick in the passenger side window somehow. I've never seen one in person, but my folks talked about theirs.
