Your bed looks better than many.
Decide how far you are going to go. If you are not doing a restoration and repaint, remove the extraneous stuff and replace the bed wood.
Otherwise, completely disassemble the bed and spend many hours getting ready for paint.
The hardware removal problems are the standard ones solved in the standard ways. You may be better off leaving the hardware you can't get off if you are not doing a total restoration.
As, I remember you won't be able to get at the captive nut on the driver's side hinge unless you drill out the spot welds and disassemble the bed.
