If you do not have the bypass block and head you need to have the bypass elbow. I would get the correct one back on their if it were mine. it cant function correctly without a bypass. sounds like it is getting too hot before the thermostat opens. that is the pont of the bypass is to allow gradual warming by letting coolant circulate through the engine when thermostat is closed. with no bypass the water is just sitting there not moving until the thermo opens. not ideal. by pass also allows constant movemet when driving in cold weather at speed when thermo fluctuates between nearly closed nad open. its a balancing act.
