As reverse gear is so very low, you're probably just getting on and off the gas as you back up. Amazing how such little engine effort causes that lurching.
Betcha if you get smoother (real smooth) on the gas pedal the problem will be minimized. When stopped, you can actually just let the clutch out fast in reverse at idle without killing the engine. Great fun when your friends comment on how low these things are geared.
