Chevy Guy,
You ansered your own question. Do the M-715 and put in a Chevy small block or better yet a Chevy 250/292 6 cyl. and forget the rest. An M-37 is for thoes who don't have to ask the question. I'm not being flip just realistic. These are really two (very very) different trucks. To start modifying an M-37 is an ever growing nightmare of changes and cost. One change leeds to the next and so on. There is no end after you start. Don't screw with a good stew.
If I get your drift the M-715 is the choise hands down. The M-715 is longer, wider, and much better set up as a towing truck. I've owned and worked both. I could go on and on about the differences but to keep it short just "keep it simple" much less to do. This from a M-37 owner and driving the same truck for thirty years.
Jackson
