Per the above thread about how rolling starts with an undersize shaft, the bolt will have a step down to the threaded area. Rolling smooshes the threads out, leaving the correct finish O.D. You can look closesly at how the transition form threads to shank to see.

Rolling is like knurling valve guides, only out side instead of in. Or like knurling in general.

So far as grain structure, I would think rolled threads would distort it more than cutting. Cutting only chance to the depth of the cut, rolling can force changes internally deeper then the threads. Good or bad, dunno.

Back to the topic, the shop I use stocks straight rods with rolled threads. On order, they pull the correct rods from, stock, and use a big press with male and female dies. One move of the press makes one u-bolt. Square no big deal. Done while you wait, not before you get there. But they do ship.
