Good observation about both eyes open when sighting down the barrel.
With my first BB gun that was not communicated to me. So, I got into bad habit of closing the "off" eye.
Later when learning to shoot a shotgun, that was not a good habit, especially since my dominant eye turned out to be the "off" eye when I did the simple check they talk about.
