Here is how I learned to do it. I use a small air brush to do this.
Let's say you want a black knob with white letters.
1) Spray paint the whole knob black including the letters. Make sure that you have a good coat of black on the knob face. Let it dry.
2) Paint the front of the knob (face) white. You do not need a real thick coat of white but make sure that the letters have sufficient paint. You can either spray the white or hand paint the letters making sure that you cover the black paint around the letters. Let it dry.
3) Sand the white paint off the face of the knob until the black paint underneath is visible. Wet sand with 600 then 1000 grit paper using a soft sanding pad. Sand carefully around the lettering so you get nice sharp edges to the letters.
4) Using rubbing compound, polish the knob. This will leave you with a black face on the knob with white letters.
