They use some kind of a 'descender'. In mountaineering, they used two use two carabiners back to back. Nowadays they use some figure eight shaped devices. I guess if I owned my own bucket truck, and it was in the kind of condition all of my equipment is maintained at ;), I would acquire some safety equipment, read up on it, and practice escaping from the bucket in a low position.
Some easy looking stuff can be so hard to do. Getting out of a bucket is easy, doing it without pulling a Peter Plummet or hanging yourself is harder. Riding an escalator down is the plan.
