Do you live in the west? If so the species make sense. But if you live in the eastern half, white oak is hard to beat.
Whatever you choose, make sure you hand pick the wood to get it as "clear" as possible (free of knots). Knots typically are what makes the wood want to warp.
Also, you want it either kiln dried or air dried, stacked with spacers for ventilation. A rule of thumb is one year air drying per inch of thickness. With my white oak bed, I let it air dry for about three years before I planed and rabbeted it, etc.
