It's a mixture of oil and beeswax. Best way to get it off is to warm it up and wipe it off with a rag. Gasolne will somewhat work, but it doen't really touch the wax part so it doesn't work as well as you'd think. For U-joints, you don't want to get solvent down in the bearings, and a little left-over cosmoline won't hurt anything, so I would just warm them up (hot water temperature), wipe them off reasonably well, and call it good.
I would tend not to trust the 50-year-old grease in the bearings though. At a minimum, give it a good lube with new grease. You might take a cap off and see how bad the old grease looks and if it needs to be all cleaned out. Sometimes it sort of crystallizes.
