The carbon build up is the downside of flatheads. you can get the engine to last a long time if you pull the head every 15K or so and clean all the carbon off the piston tops, valve area, adn cylinder head. Way back service staions used to do thise service, some even had walnut balsters for blasting carbon out thru the spark plug hole.
