I would suggest red oak over hickory. Hickory tends to twist more than oak when drying. With good polyurethane I would imagine you can somewhat offset red oaks tendency to hold water.
I got my angles from Mar-K which were very nice quality. I then "spot welded" them to my bed sides. After trial an error, what worked best for me is to drill a hole 3/16 in diameter just through the angle, then fill it up with weld with the MIG welder, bonding it to the underlying bed side.
I used plain steel angles which will get painted with the bed sides, and will use s.s. bed strips between the boards.
