You have to balance head shaving with other engine mods and intended use. I'm told that you can mill 0.100 off a stock setup but then you are looking for head gasket problems. Never tried it myself.
I stuck to 0.030" off the head and none off the block because I could not tell what year the block was (date not cast in to the block) *or* if the head had already been milled yet (a pretty common ocurrance).
You can always ull the head and have her shaved a little more; more difficult to put it back on <g>.
This will *hopefully* work well in concert with the porting job, mild cam and dual intake/exhaust to deliver power and drivability without requiring strictly premium gas.
