Bruce; I dont know a source. It takes a huge amount of syrup for a small yield of cream. Its pure maple syrup boiled at a much higher temperature and then quickly cooled. Its then stired until sugar crystals form and it turns into a comsistancy thicker than Yogart. It dont last long around here ha ha.
