If you have pronounced ridges, you better mike out the bores before you go any further. You may need to go to the next standard oversize pistons. For 20 over, that's only .10 a side, which isn't much. As far as the head gasket, it's a common failure, but do rule out any possible cause of overheating before you restart. Make sure the head is within flatness specs, or have it cut to flatten it.
If you misjudge the amount of bore wear, the worst that will happen is that the truck will smoke and have lower power. Then you'll just have to bite the bullet and rebuild. If you mike it, then you'll know if you're in the ballpark. Good luck!
