Valve adjustment in the L-head Dodge engine-how?

I am interested in the technique used to adjust the valves on my 251 dodge engine. I understand that theis task should be undertaken when the valves are hot. Since the two covers are under the exhaust manifold, isn't this a rather difficut job- rather hot down there after running the engine up to normal operating temp. Do I need spacial wrenches and other things? Can one set the valves cold, or is this not an accurate method?
