Two gallons of anti-freeze should do it, but you'll need more when you have to drain it down to fix leaks. You can always use anti-freeze, and it doesn't go bad in the jug, so why not get twice as much?
Personally, if I've done much work that needed the system drained, I'll fire up up on plain water first until I know there are no leaks, then drain and re-fill with antifreeze. That's a good way to get some of the initial rust, dirt, and blobs of sealer out too.
