Thermostat Question

Well of course I read the manual after I installed the thermostat on my Wc52. According to the WWII manual it should be turned one direction and is marked so. How important is this? Also I bought the 180- deg one. The truck is currently running 185 deg. The manual says it should be a 160 deg thermostat. Is this a big deal or should I change it out?
