There are generally two grades of stainless, one at grade 3 (303, or 18-8) at around 75,000 psi tensile and one near grade 5 (316) at around 100,000 to 125,000 (depending on size) psi tensile strength.
Lots of very good info on the site, but I have never dealt with them (yet) so I cannot comment on their service...
