If you're looking for a temporary 6 volt battery you ought to be able to use a battery charger that has a 6/12 volt option.
I'd use some sort of potentiometer to get the speed where I wanted it, or measure the voltage across the motor and vary the pot. You could later convert from the pot to a fixed value resistor. You probably are interested in a substantial resistor (wattwise).
