Dave, I build white Oak furniture & can tell you that either way is plenty good for the box of a pick-up.
Air drying is better than Kiln drying so long as it has dried for long enough....it takes years. The reason kiln drying is the norm is for obvious reasons...most people don't have years to wait. Kiln drying is unpredictable depending on the kiln. Always check wood with a moisture meter before using it but as I said, I don't think you really have to worry about it for this application.
