By "new seals and gaskets" do you mean modern seals and gaskets or NOS seals and gaskets.
If you got lucky enough to find NOS, I would use the cornhead grease. New seals, you can try 90-140 gear oil. If it leaks, drain and go with cornhead grease.
Note that I would never suggest using cornhead grease in steering knuckles or winch gear boxes. Good modern seals and Speedi Sleeves are readily available for the winch and the felt seals in steering knuckles were not designed to contain lubricants as thin as 90-140 or cornhead grease. Worm gear winch cases experience a LOT of high pressure friction.
