Tender meat, less game flavor, less time needed to hang them for bacteria to set in and break down tough muscle.
I was raised to take the tongue, heart, liver (checking for white spots), and intestine for sausage casing (just flush with copious amounts if water) We also cook cow intestine and stomach so cleaning intestine is not a issue.
