318 poly swap done. Running a little hot

I bought the kit and had a 318 poly installed in my 57. Nicely done but there was no room for a fan .. a pusher fan was installed.. its running what i call to hot on a normal cloudy day.. its 195 to 210. No traffic or hot weather. I wont drive it due to that.. I ordered a 3000 cfm fan to replace the 1040 cfm fan that was installed by engine installer.. he says the one in there is plenty.. i dont feel good about it.. the hoses were run different as well to get to the bottom hose that was opiset the pump out let.. any advice besides the 3000 cfm pusher fan.
