The first thing I would do is check the temp right where the temp sending unit is the block, that should give an indication if it's reading correctly within a few degrees. If you really want a cool running engine, solder the joint on the water distributor tube. It loses a lot of pressure to circulate water across the head from that joint. I have a 160 and if I don’t run an apron in front of the radiator, it won’t get to 160 on a cold day, 140 at best. The hottest it gets on a 110 day is 170 degrees.
