with the clutch plate out, examine the flywheel if there are no dark spots or heat cracks it should be fine, same gous for the pressure plate they can be a little polished or glazed, thats ok. yes if you remove flywheen there is a torque spec for the bolts/nutson the crankshaft you will need a very shallow socket on the torque wrench to do them, in most cases especially on old pws just a new clutch plate is all that is needed, check the fingers on the pressure plate and unless they are worn badly (from a bad throw out bearing) use the old upp, i would definitely get a new bearing and press it on the throw out collar (or replace entire unit) while you have it apart.
