My answer to the alternator or generator question is "depends". My advice on wire repair is generally to start over and know it is correct. Most of the modified wiring I have seen is very sloppy and generally a cobbled together mess...
Are you planning on running accessories that are charging system intensive? Snow plow pumps, certain lights, motors etc. draw pretty hard and you'll want to have enough output to cover them if they are all working at the same time. Keep in mind most generator systems do not put out high amperage at idle. Next consideration is if originality is a concern? That my lead you to a generator or a period correct Mopar alternator.
For my build I plan to use a 70+ amp 3-wire GM style alternator on a non-original 251. The current plan to have extra lights and a snow plow and the GM alternators are pretty simple to install.
