Idling the engine takes much less gas than driving down the road. If you have something within the pump that works under the inlet or outlet valve in the fuel pump, it will cause loss of pressure as you drive for a short distance.
I don't believe you have a carb. issue if you're running out of gas in the bowl. If you can idle the engine and raise RPM, float/needle are working and you're getting enough pressure for that.
I would setup a remote tank, gravity fed to the carb to isolate the carb from the other components. If the truck runs ok with that, then a new fuel pump might be in order.
Which way is the loop between the pump and carb., top of the line which will cause vapor lock, or bottom. The line has to be bent in a way to allow vapors to move to the carb. to avoid being trapped and causing vapor lock.
