The underside of cabs act as moisture collectors, funneling all the water down into the corners. The open cowl vents on trucks make a nice way for pine needles and leaves and dust to find their way into those places, creating a miniature compost bin.
I really don't think a headliner makes any difference for vehicles that are sitting outside, other than the condensation doesn't drip on your head when you finally do go out and start or drive the truck.
